Man I hope that the new arenas dont have the gay LOS issues the old ones did. Could be thats what they were aiming to avoid however with moving obstacles. (would be hard to always hide behind something if it moved in certain ways over the terrain or faster than you)
Good players will use LOS defensively to their advantage. Good players on the attack will be able to overcome it. Having LOS is required for arena to be dynamic at all.

The new moving objects are still to provide LoS to allow people to play with it, but in a more dynamic fashion. They're not removing LoS anytime soon.
Just curious if they put first aid in. Am I going to have to stock up netherweave or is it just the new cloth type right away?
If its anything like the current experiences, once after training a higher level of First Aid, the Heavy Netherweave Bandage should be able to get your skills up until its green, which would be a good indication of eligibility to learn a new bandage with a new cloth type, presumably Frostweave.

First Aid is in and you can train it as soon as you arrive in northrend, and start making frostweave bandages, right from 375.
You can also train all other professions at the starting towns (or at least the alliance one in the borean tundra), and they don't seem like they've been placed to test them, they have their section of the town.
Normal Frostweave bandages can be trained; Heavy and Dense Frostweave bandages require world-drop manuals. (They're BoP, but I found both within the span of a few minutes in Zul'Drak. I imagine they won't be tough to get ahold of.)
I don't know if it's been mentioned in this thread yet, but the new "dense" bandages have much higher healing per second, but a shorter duration, so they heal for less total.
Lake Wintergrasp.
Upon entering the zone, do players just get into the middle of things? Or will it be instanced?
How would they calculate your participation if you leave before it ends?
Lake Wintergrasp is NOT instanced. That's the whole point. I've as yet to go there myself, but anything you earn will be from direct contributions presumably. E.g. being there when it's captured, directly doing damage to a wall or what have you.
They've talked about wanting to give the side that currently controls the zone a northrend wide buff of some sort.
i.e. halaa

Right now, they don't. You don't get anything until one side wins.
Just got on last night. With the changes I didn't just lose 20 defense from anticipation being changed, I also lost 17 additional defense from the rating changes. This effectively dropped me below the crit cap and I had to go to the bank to pull out my old t4 gloves and King's Defender since my normal gloves and weapon do not have defense on them. I guess it isn't that big of a deal and I'll be fine when/if I get my gloves up to the level of most of my other gear but it was still rather irksome.
e: Plus side is I kept the toughness of a protection warrior and got triple the killing power.

They added a pretty epic questline in this build, where

Varimathras betrays the horde, looses the plague on horde and alliance alike, kills Bolvar Fordragon and Saurfang the Younger, and takes over Undercity. You get to fight alongside Thrall and Sylvanas to reclaim the Undercity. When you get there, Varimathras is opening Burning Legion portals to summon "the master". After you kill him, King Varian Wrynn shows up and attacks. At the last minute, Jaina teleports in, freezes everyone, and teleports the humans away.
I frapsed it all, but it was about 32GB worth of video. I'm not sure I can get it all edited and uploaded...I'll try, though.

Edit: This fight is just.. clearly.. unbelievable. The music, everything. So Thrall is owning with elements spells x 9999 and sylvanis is teleporting around shooting shitloads of arcane missiles? What was voljin doing, was he the one responsible for that big gold circle spell thingy?
